Why are my ciabatta just one big bubble?

Hi, I've made these twice this week and have had the same problem both times. My rolls end up with just one big bubble so that when I slice them open, the bottom looks how I expect a Ciabatta to look with loads of small bubbles but the top is just a paper thin sheet. I blamed my flour the first batch (00) so switched to bread flour for the second batch and the same thing happened. The flavour was lovely so would love to figure out what I'm doing wrong, thanks.

Hey Elissa! This can happen if the dough is over hydrated, or even over proofed. You could try dropping the water a bit if the dough feels too loose and wet. If it doesn't try pulling back that final proof time.
